I absolutely had to try this recipe and I am so glad I did. Pesto, sometimes spelled as pasto or the original dish pesto alla genovese–it is a sauce originating in Genoa, the capital of Liguria, Italy.
This dish is so fast and easy. All you need is zucchini to make the noodles and the following:
. 2 cups fresh basil
. 2 cups fresh spinach
. 1/2 cup Parmesan cheese
. 1/2 olive oil
. 2 tablespoon pine nuts or walnuts
. 2 garlic cloves
. 1/4 teaspoon lemon juice
. Optional – pepper and salt to taste
. 2 cups cherry tomatoes
Add all ingredients to blender and blend
Toss in noodles — Add tomatoes and it’s ready to serve.
