Cinnamon Spiced Muffins

This recipe is spot-on . The applesauce and pecans make a nice combination.

If need you some motivation, these muffins will do it. They are so good, they will put a smile anyone’s face. The recipe is so inexpensive to make, you can make a batch and take to the office, or have a warm batch ready for a comfy breakfast with guest.

Ingredients:

  • 2 cups all-purpose flour
  • 1/2 cup brown sugar packed
  • 1 3/4 cups applesauce unsweetened
  • 1/4 cup vegan butter melted or vegetable oil
  • 1/4 cup cashew milk
  • 1 1/2 teaspoons baking soda
  • Pinch sea salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon nutmeg
  • 2 teaspoons vanilla extract
  • 1/2 teaspoon ground cloves

Topping

  • 1/2 cup pecans chopped
  • 2 tablespoons organic sugar
  • 2 tablespoons brown sugar

Instructions:

  • Preheat oven 350 degrees (180 degrees Celsius). Line cupcake tray with 6 cupcake liners.
  • In large bowl whisk dry ingredients together; flour and sugar. Add baking soda, salt, nutmeg and cinnamon.
  • Add milk, vanilla extract, butter, applesauce. Combine all ingredients and mix together well.
  • Spoon batter into 6 liners evenl.
  • Mix together pecans, organic and brown sugar for topping.
  • Sprinkle topping on each cup
  • Place cupcake tray in oven 45-60 minutes or until when sticking tooth pick in center it comes out clean.
  • Remove from oven and allow to cool.

Pumpkin spice recipe

  • 4 teaspoons ground cinnamon
  • 2 teaspoons ground ginger
  • 1 teaspoon ground cloves
  • 1/2 teaspoon nutmeg
