It is a year now and I am loving the recipes that I get to make and share.
This recipe is Pesto & Zucchine Noodles. It was an easy and quick dish.
. 2 cups fresh basil
. 2 cups fresh spinach
. 1/2 cup Parmesan cheese
. 1/2 olive oil
. 2 tablespoon pine nuts or walnuts
. 2 garlic cloves
. 1/4 teaspoon lemon juice
. Optional – pepper and salt to taste
. 2 cups cherry tomatoes
Add all ingredients to blender and blend
Toss in noodles — Add tomatoes and it’s ready to serve.
