My Vegan Spinach Wrap

Wraps are a great meal for the summer. They are quick, easy and tasty. 

This meal takes 15-20 minutes.

Combine all ingredients in a sauce pan:

2 table spoons of olive oil

1 cup of chopped onions (red & white)

1/2 cup of green onions

1 tomato cup in small cubes

1/2 cup of green pepper

2 cups of corn – fresh or canned drained

1 can of black beans – rinsed and drained

1 can of kidney beans – rinsed and drained (optional)

Season to taste:

Pepper

Cayenne pepper

Cumin

Coriander

Chili powder

Garlic powder

Dried Rosemary

Dried Thyme

Mix all together and let simmer for 10 minutes.

Spinach Wrap:

1/2 teaspoon vegan butter. Warm wrap in skillet to form a light crust. 

On opposite side add 2 table spoons of simmered veggie sauce. 

Add avocado, salsa and vegan sour cream optional.

Tuck sides of wrap to prevent sauce from leaking out. Roll wrap and continue to tuck sides. Cut in half and there you have it.
